Professional Cookery: Kitchen & Larder Level 3

What entry requirements do I need?

You will need a minimum of: 5 GCSEs grade A*/9 - C/4 including English and maths, and a Level 2 Hospitality and Catering qualification.

What will I learn?

You will be able to use your passion for cooking to fuel ambition to become a qualified professional in this dynamic industry. You will be able to explore the world the Gastronomy, learn a range of advanced skills and techniques to prepare and cook meat, poultry, fish and vegetarian dishes. We will also guide you through kitchen and larder professional cooking operations, develop your leadership and supervisory skills and give you a thorough understanding of sustainability in a professional kitchen.

You will study a range of topics including:

  • Exploring Gastronomy
  • Supervision of Safety in Hospitality
  • Leadership and Supervision in Hospitality
  • Sustainability in a Professional Kitchen
  • Advanced Skills and Techniques in Meat Dishes
  • Advanced Skills and Techniques in Vegetable and Vegetarian Dishes
  • Advanced Skills and Techniques in Poultry and Game Dishes
  • Advanced Skills and techniques in Fish and Shellfish Dishes
  • Kitchen and Larder Professional Cookery Operations

During this one-year advanced course you will be able to build on your experience of working in a kitchen or previous study to improve your cooking skills and take the opportunity to specialise in a specific area or even move into a management role.

Your assessment during the course will consist of three external assessments which contribute to 48% of the qualification. The remaining units will be assessed by assignments and tasks culminating and a final synoptic internal assessment, asking you to put your newly gained knowledge into practise to plan, prepare, and provide the provision of kitchen and larder items for a catering event.

The units are graded Pass, Merit & Distinction contributing to an overall grading between PP & DD.

What could I progress on to?

Once you have completed the course you can progress onto Higher Education to study subjects such as Hospitality Management at degree level.

You may look to start your career in the industry as a Brigade chef or join a Management training scheme in a hotels or global company in the industry.

During the course you will be required to wear a uniform, which will cost approximately £250. You may also have the opportunity to visit a number of catering and cooking events which may incur additional costs.

Entry Level

These courses are for students who want to start progressing up the qualifications levels or have no previous qualifications.

Vocational Level 1

You must have a mixture of grades E to G at GCSE to study at this level.

Vocational Level 2

You must have two grade D's and two grade E's at GCSE or a relevant level 1 qualification to study at this level.

Vocational Level 3

These courses are equivalent to A levels, you must have at least four GCSE's at grade C or above or a relevant level 2 qualification.

A Levels

A levels are level 3 courses, you must have or expect 5 A-C grades at GCSE level including Maths and English.
Foundation Degree and Degree Our university courses typically require a relevant level 3 qualification or 120 UCAS points.
